Chicken recipe

Ok, I'll get this started. Know we're all looking for low-carb recipes. This chicken recipe is great - and easy. Enjoy!


2 chicken breasts

3 Tblsp of jalapeno/pepper jelly

1 Tblsp white wine vinegar

1 Tblsp honey

1 Tblsp dijon

1 Anaheim chile

jack cheese


Preheat oven to 375.  Mix jelly, vinegar, honey and dijon in smallish baking dish (like a pyrex bread pan).  Dip chicken in the mixture (both sides) and lay in bottom so it soaks.  Put in oven and cook for 15 -18 minutes.  Take out of oven, put medium-thick slice of jack cheese on top of each breast.  Cut chile to make 2 flat pieces. Lay a piece over each piece of cheese.  Cover pan with foil and cook another 15 minutes.
