I’ve been vegan for 3 years, and more recently high carb, low fat vegan, and I feel AMAZING! With this lifestyle, you’re able to eat as much as you want, no calorie restriction, and fuel your body with whole foods like fruits, vegetables, starches (potatoes, etc.), beans, lentils, hummus, veggie proteins. It’s an extremely easy way to eat and sustainable long-term, and having whole foods rather than processed foods and animal products has helped my blood sugars. I love it!
I’m the opposite, LCHF (or maybe MF). My BG suffered with a high-carb diet for years. So much easier to manage for me by keeping my carbs at <30g/meal whenever possible, <100g per day. But glad you’re making the vegan lifestyle work for you.
