Low Carb Zuchinni Cookie Recipe for anyone interested!

I know what your thinking, zuchinni? really? yes. there actually quite delicious and definately my favourite diabetic recipe so i thought i would share it.

they are very moist and you cant taste the zuchinni at all, trust me :)

makes 48 cookies (8 carbs each!)

Cooking Spray or Parchment Paper on cookie sheet:

Preheat oven to 350 degrees.

In large bowl, cream: ½ cup margarine, softened

1 cup sugar ( ** or 1/2 cup sugar/1/2 cup white Splenda)

till light and fluffy.


Add one egg, 2 cups All-purpose flour, 1 tsp baking soda, 1-2 tsp cinnamon, and ½ tsp salt (optional)

(**or 1 cup all-purpose & 1 cup whole wheat)

and mix well.


Add in 1 medium zucchini (approximately 1 cup grated zucchini ) ** actually I have added 1 ½ cups of zucchini to make more cookies!) and 1 cup mini semi-sweet chocolate chips, Mix well.


Drop cookies by tablespoons onto cookie sheet.

Bake 15- 20 minutes till brown

and enjoy! :)
